Alexa Downs, from Brookfield, Connecticut, is a senior nutrition and dietetics major at the University of New Hampshire. Alexa is conducting research on maternal and early childhood nutrition in New Hampshire 

COLSA: Tell us about your research in as non-technical language as possible. 

Alexa Downs: I work in a lab focused on maternal and early childhood nutrition. I develop educational materials for community outreach, such as infographics on healthy eating and seasonal foods available in New Hampshire. I also build our lesson plans that include story scripts, tasting activities and food-related crafts. 

COLSA: What challenges or issues does your research seek to address? 

Alexa: Our research aims to enhance knowledge and support for nutrition among pregnant and lactating mothers and to introduce children to new foods. We also teach parents how to provide proper nutrition as their children grow. 

COLSA: What have you learned from this experience? 

Alexa: I have learned that a lot of people don't have access to fresh, high-quality food. There are many people who don't have the knowledge or resources to obtain nourishing ingredients. 

COLSA: Who are you collaborating with in your research? 

Alexa: I work with other students, both undergraduates and graduates, daily, under the guidance of our professor, Dr. Mena. In the field, I work with community partners and families to implement our nutrition programs. 

COLSA: What should prospective students know about UNH? 

Alexa: Prospective students should be aware of the unique opportunities available at UNH. As a freshman, I never imagined I’d be involved in research in a lab, but I love it. UNH is excellent at providing resources and making new experiences accessible and less daunting. 

COLSA: What do you love most about UNH? 

Alexa: I love how welcoming the staff are. As well as how all the students come together to form a community. I love seeing everyone hang out outside during the warmer seasons.
